Zupas Wisconsin Cauliflower Soup

We typically go out for dates in the late afternoon. Only the baby is at home with us; the brothers are both at school. And by dates, I mean going to Cafe Zupas and Costco. However, we enjoy spending time together, and Zupas is where we frequently get lunch.

My husband had delicious Wisconsin Cauliflower Soup last year. After just one bite, I was hooked! I doubt that I would have chosen this soup. Now I consistently order it. For a while now, my husband has been yearning to prepare it at home. He was ecstatic that I had finally arrived. tasted identical to Zupas. It was incredible.

Wisconsin Cauliflower Ingredients

A delicious dish is made from basic ingredients when combined. A creamy, delectable cauliflower soup that tastes just like Zupas!

Butter: Richness and flavour are added.

Onion: Cut the onions finely so they can sauté more quickly.

Flour: This will aid in soup thickening.

With half the fat, half and half gives you all the creaminess.

Use more or less water, depending on your choice, to thin the soup to the right consistency.

Beef or vegetable broth can be used in place of the chicken stock, but I prefer using chicken broth for this soup.

Cauliflower: You could need more than one head to obtain your 2 pounds, depending on the size of your heads.

Making Zupas Wisconsin Cauliflower Soup

Melt: In a sizable pot, melt the butter. When it is smooth and golden, add the chopped onion. Stir the flour in. Pour the half-and-half, water, and broth in gradually while whisking continually to prevent any flour lumps.

Cook: Stir in the cauliflower until it begins to boil. Cook for about 15 minutes, reducing the heat to medium-low.

Blend: Puree the soup in a blender or with an immersion blender until it’s smooth. Go back to the pot

Increase the soup’s heat to medium. Add the cheese and Dijon mustard and stir until the cheese is melted. Present with optional garnishes.

Tips for Great Wisconsin Soup

Cauliflower: You can use frozen cauliflower if fresh is not available. After steaming the cauliflower in the microwave per the instructions on the package, add it to the broth.

Texture: You can blend the soup until it is extremely smooth or leave it a little bit chunky, depending on how you prefer your soup. For a little more heartiness, you can even use cooked potato dice.

Cheese: You can experiment with the cheeses, but the flavours will be slightly different. Try substituting parmesan or asiago for the pepper jack. Another excellent cheese to use is sharp white cheddar.

Toppings: Add extra cheese, bacon bits, croutons, and green onions to the top of your soup.

Storing Cauliflower Soup

The soup won’t freeze properly because of the strong dairy content in it. When you defrost it, it will separate and become less creamy and pleasant.

However, this will keep excellently in the refrigerator for up to 5 days. On a stovetop, reheat over medium-low heat, stirring often to prevent curdling.
